This is a blissful staple. I use it all the time with simple fish dishes, chicken and with vegetables.


  • ½ cup white sugar.
  • ½ cup sea salt.
  • Zest of three limes.


Mix together, reserve in a glass container and use whenever you might otherwise have used salt on its own. It brings a dazzling combination of sweet, lime and salt that will highlight any dish. Easy and brilliant.
